Good day my sweets, are you in for something sweet?

I promised you yesterday I’d show you what was inside my heart-shaped-chocolate-gift-box.

Well inside the box were almond chocolate bites.

They are a variation on a very popular and well-known Dutch treat we call peanut rocks. As in little rocks made from peanuts and chocolate. Except I made them from almonds and chocolate.

It is the easiest snack to make. Your kids could do it. It is also very yummy, your kids will know what to do  after they have made them…..

There are basically only two ingredients: nuts and chocolate. But I embellished a bit.

The basic recipe for these ‘rocks’ is this:

Almond Chocolate Bites  Recipe

Use a cup of nuts (peanuts are the traditional, but it is good with healthier almonds too, and basically any other nut that tastes good with chocolate will work). Chop up the nuts in smallish bits, but not too small.

Melt half a cup of chocolate. I use dark chocolate, but milk chocolate is fine too. Melt the chocolate au-bain-marie (that is in a bowl that is sitting in hot water), or use the micro-wave. Your choice.

Mix the nuts into the melted chocolate. They should be well covered in chocolate but not swimming in it.

With a spoon make little bite-sized heaps of the chocolate covered nuts on a sheet covered in wax paper.

Let solidify, place the tray somewhere cool, but preferably not in the refrigerator.

Eat and enjoy.

Variations:

Mix your nuts; add in some raisins or dried cranberries, add a little coconut oil for smoothness, use white chocolate instead of dark, sprinkle some melted white chocolate on top, sprinkle some coconut flakes on top, etc.

These are easy to make. It doesn’t take long and they are very yummy. Just what the doctor ordered…..

    These do look good and looked so pretty in the heart box redone with decopauge –so lovely!! Nice gift to give a friend. Just for being sweet!!!!

    • That is coconut oil. I added a bit for smoothness and texture. The gift was well received and I imagine those chocolate snacks are long gone. The extra ones I made for myself sure are.
